Our Grain

We believe it takes great ingredients to make great food, none are more fundamental than grain. We go to great lengths and take extraordinary pride in providing you with the some of the world’s finest wheats; Sicilian Ancient Grains Timilia and Russello.

Using Ancient Grains offers many advantages compared to our Modern Wheat.

Digestibility

We urge you to focus on how you feel after you eat. Low in gluten, high in fiber, and free of glyphosate, our Ancient Grains are a lot easier for your body to digest. Less feeling tired, burpy, and bloated.

Health Benefits

Research suggests that incorporating ancient grains into diets may help reduce the risk of chronic diseases and promote overall health. Not consuming the pesticides and herbicides surely must do body good.

Environmentally Responsible

Our Ancient Grains are free of Pesticides, fungicides, and herbicides. Not requiring chemical sprays greatly reduces environmental impact of agriculture, and promotes a sustainable one.

Taste

It’s a real grain, and its stone ground.  Strong aromas of cinnamon and barley. Its flavor and texture are fantastic, a real treat to work with for our kitchen staff.

Cultural Significance

Timilia is one of the oldest grains in Sicily. It has essentially been unchanged for 2500 years. It is the genesis of Sicilian food. We are promoting the survival of this endangered grain, and protecting its farms, its farmers, and its heritage.

Nutritional Value

Ancient Grains are nutrient dense. They boast higher levels of protein, fiber, vitamins, and minerals compared to their modern counterpart.

They are higher in:

B Vitamins including B1 (thiamine), B2 (riboflavin), B3 (niacin), B6, and folate. These vitamins play crucial roles in energy metabolism, nerve function, and red blood cell production.

Fiber: Ancient grains are high in dietary fiber, which promotes digestive health, helps maintain healthy cholesterol levels, and supports weight management by promoting feelings of fullness.

Magnesium: A good source of magnesium, which is involved in over 300 enzymatic reactions in the body. Magnesium plays a role in muscle and nerve function, blood sugar control, and bone health.

Zinc: Ancient grains contain zinc, an essential mineral that supports immune function, wound healing, and DNA synthesis. Zinc is also important for proper growth and development during pregnancy, infancy, and childhood.

Iron: A good source of iron, an essential mineral that helps transport oxygen in the blood.

Protein: A source of all nine amino acid proteins. Timilia offers a difference in protein composition that could potentially impact digestibility and tolerance for individuals with gluten sensitivities.

Antioxidants: Ancient grains contain antioxidants such as phenolic compounds and flavonoids. These antioxidants help protect cells from damage caused by free radicals and may reduce the risk of chronic diseases such as heart disease and cancer.

Somewhere down the line Our Modern Wheat (especially here in the US) let us down. We have mutant seeds, grown in synthetic soil, bathed in chemicals, pulverized to fine dust, and bleached to create a barren industrial filler that no other creature on the planet will eat. I don’t think it’s just the gluten that is making us sick.

In a world where food choices increasingly impact health and the environment, ancient grains offer a compelling alternative, embodying a blend of tradition, nutrition, and sustainability.
